Nothing else. The workshop in Alvalade is where the starter lives and where the bread is made every day. Wednesday to Saturday the door opens to the neighbourhood and we sell what came out that morning — while it lasts.

How it is made
The whole process fits in four lines. How long it takes is another conversation.

Three ingredients
Flour, water and salt. No industrial yeast, no improvers, no preservatives and nothing of animal origin — not in the bread, not in the pastry, not in anything that takes olive oil.

A starter from 2020
Created during lockdown from flour and water, and fed every day since. It is what leavens everything that leaves this room.

Long fermentation
The dough proves for as long as it needs, not for as long as would have been convenient. That is what builds the flavour, and what makes the gluten more digestible.

Shaped by hand, one at a time
Certified organic flours, Portuguese extra virgin organic olive oil, and produce bought fresh at the growers' markets. No machine shapes a loaf in this house.

Thin golden crust, balanced crumb, light acidity. The most versatile loaf in the house, and the one to reach for when you don't want to decide.

Rustic wheat & rye

In the French manner, with wholegrain rye flour. A deeper flavour and a crust that cracks under the knife.

Japanese milk bread

The house specialty. A fluffy crumb that pulls apart in strands and a very quiet sweetness — and, like everything else here, entirely plant-based.

The Danish black bread: dense, moist, loaded with seeds. Cut it thin and it lasts the week.

Quinoa, oat & multigrain

Seeds outside and in. The most substantial loaf on the counter, for anyone who wants bread that can hold its own.

Tall and airy, poured with Portuguese extra virgin organic olive oil. Sun-dried tomato, rosemary or red onion, depending on the day.
